Sweet Corn Ice Cream

Two truly great things to love about Ohio are summer sweet corn and Jeni's Ice Cream. When Jeni paired the two in her cookbook Jeni's Splendid Ice Creams at Home I knew the recipe would be a winner, and it is. You definitely taste the corn, the sugary sweet best parts of it in my opinion! If you haven't had a chance to make it to a Jeni's location, try out this recipe and see how great her ice cream is.

Makes 3-4 cups

Step 1: Gather ingredients

You'll need:

an ice cream maker

1 ear sweet corn, husked
2 cups whole milk
1 Tbsp. plus 1 tsp. cornstarch
1 1/2 ounces (3 Tbsp.) cream cheese, softened
1/4 tsp. fine sea salt
1 1/4 cups heavy cream
2/3 cup granulated sugar
2 Tbsp. light corn syrup

Step 2: Prepare ice cream base

Prep:

Slice the kernels from the corn cob, then "milk" the cob by scraping it with the back of your knife to extract the liquid; reserve the kernels and liquid.

Mix about 2 tablespoons of the milk with the cornstarch in a small bowl to make a smooth slurry.

Whisk the cream cheese and salt in a medium bowl until smooth.

Fill a large bowl with ice and water.

Cook:

Combine the remaining milk, the cream, sugar, corn and juices, and corn syrup in a 4-quart saucepan, bring to a rolling boil over medium-high heat, and boil for 4 minutes.

Remove from the heat and force the mixture through a sieve into a bowl, leaving the corn 'cases" behind.  the leftover corn makes an excellent snack, or even a great treat for pooches!)

Return the mixture to the saucepan and gradually whisk in the cornstarch slurry. Bring back to a boil over medium-high heat and cook, stirring with a heatproof spatula, until slightly thickened, about 1 minute. Remove from the heat.

Chill:

Gradually whisk the hot milk mixture into the cream cheese until smooth. Pour the mixture into a 1-gallon Ziploc freezer bag and submerge the sealed bag in the ice bath. Let stand, adding more ice as necessary, until cold, about 30 minutes.  I find it easiest to pour the base into a ziploc supported by a 4-cup measuring cup. Then I cover the bag with ice in the cup and stick it in the freezer for half an hour.) 


 

Sweet & Savory Lassi

Lassi is a cooling and refreshing drink to have in the summers. It is a yogurt based drink and very popular in the northern parts of India. Lassis are either sweet or savory.
Sweet Lassi is made by churning yogurt along with sugar, ground cardamom and saffron(extra richness) and also flavored with different fruits(especially mango).
Savory/Salt Lassi is made by churning yogurt along with salt, roasted ground cumin, ginger juice and mint leaves.
Note:
1) Make sure the yogurt is not sour.(very important)
2) Water can be added to dilute the Lassi.(I have not added water as I wanted it to be thick)
3) Try to use hand mixer/whisk to churn the lassi as it provides a unique taste and frothy texture when compared to a blender.

Step 1: Basic Lassi.

Ingredients
1) Yogurt / Curd - 1/2 Cup
2) Sugar - 2 Tbsp (as per taste)
3) Ground Cardamom - 1/2 Tsp
4) Saffron/ Kesar - a pinch (optional)
5) Ice cubes
Method:
1) In a bowl, add the yogurt, sugar, ground cardamom, saffron and beat it using a hand mixer.
2) Then add ice cubes and beat it till turns frothy.
3) Pour it in a glass and sprinkle some saffron on top and serve.

Step 2: Mango Lassi.

Ingredients
1) Yogurt / Curd - 1/2 Cup
2) Sugar - 2 Tbsp (as per taste)
3) Ground Cardamom - 1/2 Tsp
4) Saffron/ Kesar - a pinch
5) Chopped Ripe Mango - 1/4 Cup (frozen or fresh)
6) Ice cubes
7) Chopped Almond for garnish
Method:
1) Grind the chopped mango with 2 tsp of yogurt into a smooth paste in a blender.
1) In a bowl, add the mango paste, remaining yogurt, sugar, ground cardamom, saffron and beat it using a hand mixer.
2) Then add ice cubes and beat it till turns frothy.
3) Pour it in a glass and sprinkle some chopped almonds on top and serve.

Step 3: Strawberry Lassi.

Ingredients
1) Yogurt / Curd - 1/2 Cup
2) Sugar - 2 Tbsp (as per taste)
3) Chopped Strawberry - 1/4 Cup (frozen or fresh)
4) Strawberry syrup - 1 Tsp
5) Ice cubes
Method:
1) Grind the chopped strawberry with 2 tsp of yogurt into a smooth paste in a blender.
2) In a bowl, add the strawberry paste, remaining yogurt, sugar, strawberry syrup and beat it using a hand mixer.
3) Then add ice cubes and beat it till turns frothy.
4) Pour it in a glass and garnish with some chopped strawberry on top and serve.

Step 4: Mint Lassi.

Ingredients
1) Yogurt / Curd - 1/2 Cup
2) Salt as per taste
3) Ground roasted Cumin - 1/2 Tsp
4) Fresh Mint leaves - handful
5) Ginger juice - 1/4 Tsp
6) Ice cubes
Method:
1) Grind the fresh mint leaves with 2 tsp of yogurt into a smooth paste in a blender.
2) In a bowl, add the mint yogurt paste, remaining yogurt, salt, ground roasted cumin , ginger juice and beat it using a hand mixer.
3) Then add ice cubes and beat it till turns frothy.
4) Pour it in a glass and sprinkle some ground roasted cumin on top and serve.

SWEET & SOUR CHICKEN RECIPE

SWEET & SOUR CHICKEN RECIPE

Step 1: FRIED CHICKEN 

2 Chicken Breasts

125g / 1 Cup Plain Flour

125g / 1 Cup Cornflour

1 Large Egg

1tbsp Baking Powder

Ice Cold Water

Mix the flour, cornflour and baking powder together. Season with salt and pepper. Add enough water to create a batter and leave to sit for 30 minutes. Chop the chicken into small cubes. Season with salt, pepper and soy sauce. Add the egg and leave the chicken to sit for 30 minutes. Add the chicken to the batter and leave to sit for another 30 minutes. Fry the chicken at 200 degrees C for 3 minutes

Step 2: SWEET & SOUR SAUCE

1 Onion (Medium)
1/2 Red Pepper
1/2 Green Pepper
2 Spring Onions
1 Garlic Clove
125ml / 1/2 Cup Water
1tbsp Cornflour
2tbsp Brown Sugar
2tbsp Balsamic Vinegar
2tbsp Tomato Ketchup
1tbsp Tomato Puree
2tbsp Soy Sauce
2tbsp White Wine Vinegar
432g / 2 Cups Canned Pineapple
Mix all the wet ingredients together with the cornflour. Saute the onions, followed by the rest of the vegetables. Add the pineapple and the wet mixture. Simmer for 5 minutes and finish by adding the friend chicken.

sweet potato, banana and hazelnut bread

A lovely moist spiced loaf made with bananas, sweet potato and hazelnuts. Sort of like banana bread but with added goodies! This is great for breakfast and also for an afternoon snack. Another way of using up over ripe bananas.
 
preparation time: 15-45 minutes (depending on whether you are cooking the sweet potato first)
cooking time: 30-40 minutes
ingredients:
 
2 medium sweet potatoes (leftover cooked sweet potato would be great here but I cooked from fresh for this recipe)
2 over ripe bananas
2 eggs
1/4 cup sunflower/vegetable oil
1/2 cup whole hazelnuts
1/2 cup brown sugar
1 cup plain flour
1 tsp baking soda
11/2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice (pimento)

Step 1:

 preheat oven to 190C and grease a loaf tin.

Step 2:

if you are cooking the sweet potato, wash and either bake in the oven for about 30 minutes or in the microwave for 5-10 minutes until soft.

  • Step 3: 

     when cool enough to handle scoop out sweet potato, mash and leave to cool for about 5-10 minutes.

    Step 4: 

     when the the potato is cool add to a bowl with the bananas, sugar, oil, eggs and mix together with a wooden spoon or an electric whisk for a few minutes until well combined

     Step 5: 

    sift in the flour, baking powder and soda, and spices and mix briefly until combined

    Step 6: 

     stir in the hazelnuts and then pour mixture into the prepared tin

     Step 7:

     bake for 30-40 minutes - the bread is cooked when a skewer comes out clean.

    leave to cool in the tin for a few minutes before leaving on a rack to cool.

    Step 8: 

     leave until completitly cool before cutting into slices - I hope you enjoy :)

Grilled Pizza.

Who doesn't like pizza? Pizza can be made in so many ways and can be accommodated for anyone. My wife doesn't eat dairy but that doesn't keep us from eating pizza; We just make our own. Here is a fun, tasty and simple recipe for making pizza using the grill!

Step 1: Ingredients and Prep.

Ingredient List:
Pizza Dough
Pizza sauce
Mozzarella cheese (Mozzarella is optional. Choose whatever you like! Vegan cheese works too; My wife used Daiya for her pizza.)
Pizza toppings of your choice
Vegetables
Olive oil
Set your grill on low. Cut up your veggies and place them in the muffin tin along with any other topping choices. Put your sauce and cheeses in separate bowls as well.
This step is crucial to grilled pizza, as you will need to add the sauce, toppings, and cheese during the cooking process. Using a muffin tin allows you to easily portion the toppings. I decided to keep the sauce and cheese separate from the toppings because they're in different steps of assembly.
Separate your dough in 2 equal portions; or for smaller pizzas 4 equal portions. Now roll out the dough using a rolling pin until desired size has been reached. Place raw dough on a plate and oil it on both sides.
Now, let's start grilling!

Step 2: Propane and propane accessories?

I'm sure you can use a charcoal grill for this step (and i'm going to try that out later),however, gas grills provide easier temperature control. The grill should be warmed up by now, clean it off it you must cause here we go!
~Mini steps~
1. Put the raw dough on the grill.
2. When the dough starts to bubble, flip it over.
3. Now that it's been flipped, it's time to start the fun part! Let's assemble our pizza. Add your sauce, cheese and toppings onto the grilled side in any way you want.
4. Close the grill and let the pizza's sit for a few minutes until the cheese has melted and toppings are cooked. Once they finish, slide them onto their own plate and...

Step 3: Finished!

Proudly admire your work, you have just finished making grilled pizza! My wife introduced this concept to me, and I think it's a winner. I cannot use my gas grill where I am currently (and it's the winter right now), so i'm going to experiment with charcoal. Happy grilling!

 



 

Pizza Bites...

Pizza Bite's!!!!

I love pizza, but turning it into a {pizza bite} is the best!...

So let's start making this awesome snack.

Ingredients:
1 recipe of pizza dough
4 oz. mozzarella cheese, cubed (about 20-24 pieces) or shredded mozzarella cheese
Sliced pepperoni

For Topping:
 6 tablespoons butter, softened
3 tablespoons minced garlic

Pizza Dough recipe:
1/2 cup warm water
1 1/4 teaspoons active dry yeast
1 1/2 teaspoons honey {or sugar}
1 teaspoons salt
1 tablespoons olive or canola oil
1 1/2 cups bread flour {give or take 1/2 cup}



Yields: 20-24 bites
Preheat oven to 350 degrees.

Step 1: 

 In a large mixing bowl, preferably a stand mixer, stir yeast and honey {or sugar, which ever you picked} into warm water. Let sit for a minute. Pour in salt, oil and half the flour and mix.

 Step 2: 

Once that flour is mixed in, start adding the other half of flour in bit by bit until you get the pizza dough to the consistency you want. If it sticks to your hands, add more flour.  

Step 3:

Once you get to this point, turn the mixer on high to knead for 6 minutes.
No stopping before 6 minutes!!!!!! Once 6 minutes is up, turn mixer off and take dough out.
The dough should be smooth and easy to work with.  

Step 4: 

Lightly grease the bowl and cover with towel or plastic wrap and let it rise 1-2 hours.  

Step 5: 

Lightly grease a 9-inch pie pan.
Divide the pizza dough into 20-24 roughly equal sized pieces... (mine i made bigger, thus, you  end up with 12 pizza bites.) (Make them what ever size you want!!)  

Step 6: 

Take one of the dough pieces,squish the middle and put 2-3 slices of pepperoni and then a cube of cheese, or approximately 2 tablespoons of shredded cheese, like i did.  Pull the edges of the dough around the fillings and pinch closed.  Place seam-side down in the baking dish.  Repeat with the remaining dough pieces.
Spread the topping mixture (butter and garlic) over pizza bites.

Step 7:

Bake for 20 minutes, or until the tops are golden brown. Serve warm, and enjoy!!!!!!!

Thai fried rice Recipe

i love the taste of thiz.

INGREDIENTS:
• 4 cups cooked rIce
• 1 Chicken breast, chopped into small pieces
• 1/2 Tbsp. soya sauce
• 3 Tbsp. chopped onion
• 3-4 Cloves Garlic, minced
• 1 fresh red or green chili, chopped
• 1 small Carrot, chopped
• 1 egg
• 1 ½ cups pineApple chunks
• 1/4 cup peas
• 1/4 cup roasted cashews, unSalted
• fresh Coriander for garnish  

• 2-3 Tbsp. vegetable Oil
• STIR-FRY SAUCE:
• 2 Tbsp. pineApple juIce
• 2+1/2 Tbsp. Fish sauce
• 1/2 tsp. Sugar
• 1/3 tsp. turmeric
• 1/4 tsp. Coriander
• 1/4 tsp. cumin
 

METHOD:

1. Mix chopped chicken with soya sauce. Set aside to marinate.
2. Combine all 'Stir-fry Sauce' ingredients together. Set aside. Heat a wok add the oil, then add the onion, garlic, chilli and carrot. Stir-fry 1 minute.
3. Add marinated chicken and stir-fry until chicken changes colour.
4. Add in the egg and continue stir-frying Add the stir-fry sauce. Also add the cooked rice, pineapple and peas. Stir fry well and then add the cashews.
5. Remove from heat and add more fish sauce if required. Garnish with chopped fresh coriander and serve immediately.

Behari Tikka Boti Recipe

Behari Tikka Boti is really healthy traditional cooking recipe. It is very easy to prepare and gives you unique taste of Barbeque Recipes.

INGREDIENTS:
 1 kg boneless Beef strips or Chicken (breast strips)
Some cooking Oil to glaze the pan
1 cup raw Papaya paste (green Papaya paste)(with skin)
1 ½ cup fried Onions
1 tbspns Ginger Garlic paste
1 cup plain yogurt
¼ cup Vinegar

SPICES, 

 2 tbspns Coriander powder
2 tbspns red Chilli powder
1 tspn paprika
Salt to taste
1 tspn red chilli flakes
2 bay leaves (powder form preferred)
1 tspn black cumin
1 tspn cumin powder
1 Cardamom black (crushed)
1 green Cardamom (crushed)
½ tspn Garam masala
FOR GARNISHING
2 Green chillies slIced
Some Coriander chopp,

METHOD:
 
In a mixing bowl mix all the ingredients except oil, green chillies and coriander and keep it aside (refrigerator) for 20 hours. (mix good with your hands)

If you don’t have a BBQ grill at home, line a pan with aluminum foil and grease the foil with some olive oil.

Put the marinated mixture in it and bake in preheated oven (160 degrees Celsius) for approximately 90 minutes.

If you have BBQ grill at home, thread the meat on the skewers and cook on very low heat until they are done. 


Take your dish out on a plate and serve hot with garlic nan or tandoori roti.

Chicken Malai Boti Recipe

chicken Malai Boti is the rich creamy chicken BBQ which is very soft, tender and delicious form of chicken.the recipe of Chicken Malai Boti so you could make it easily at home. It's utter flavorful taste wouldn't allow you to stop hands till the last bite. As it is made with chicken meat, you don't have to wait for Eid ul Adha. Enjoy the recipe below:

INGREDIENTS:
Boneless Chicken – ½ k (cut in 2 inches of cubes)
Salt – to taste
Lemon juIce – 2 tbsp
Ginger Garlic paste – 1 tsp
Raw Papaya – 1 tbsp
Cream – 2 tbsp
Green masala:
Green chillies – 8
Fresh Coriander ground – 1 tbsp
Mint leaves – 6
METHOD:
 Apply all given ingredients on chicken pieces and leave for at least ½ an hour.
Skew on skewers and bake in oven on 180ºC for 30 to 35 minutes and give smoke of charcoal or cook in pan or BBQ.

Peshawari Chapli Kabab Recipe

Chapli kababs recipe is all time favorite of Pakistani people. Chapli kabab (known as Peshawari Kabab) is one of the traditional recipes of Pakistan. The dish is prepared with simple spices and ingredients and yet it has a special taste. People love having it with raita, salad and hot naans. People travel long to enjoy Pakistani chapli kababs. Though it is famous to be from Peshawar, it is available in many cities of Pakistan.

INGREDIENTS:
 Minced Meat: 1 kg
Mutton Fat: 1 cup
Crushed Pomegranate: 1 cup
Solid Pomegranate: 1/2 cup
Eggs: 6 pieces
Salt: As per your taste
Garlic: 1 piece whole
Coriander: 1 tablespoon
Tomatoes: 3 pieces
Green Coriander: As per your taste
Green Chilies: As per your taste
Onions: 1 kg
Banaspati Oil: 1 cup
Mirch: 1 Teaspoon 

Corn Flour: 5 tablespoons

METHOD:
 1. Chop the onions into small pieces.

2. Put eggs, green onions, tomatoes and corn flour and mix them.

3. Take 3 tablespoons of the mixture in your palm.

4. Roll it between your palms and form a ball.

5. Press the ball between your hands and flatten it to form the kabab. 


 6. Heat the oil in pan and fry completely.

7. Hot and delicious Chapli Kabab is now ready to eat.

8. Decorate it with salad items, lemon, onion rings and green chili and receive the gratitudes.

How to make mava malai kulfi

Hi today I am going to make this mava malai kulfi. One thing is don't confused about the mava malai. Mava malai is a flavour of ice cream or kulfi (popsicle).

Step 1: ingredients and materials needed

 Ice cream mix
Popsicle stick
Plastic glass or steel glass

 

Step 2: ice cream making

First of all take mava malai flavour ice cream mix and make ice cream. ? you can also use another flavours and also use packed ice cream. 
 

Step 3: melt

Now melt ice cream.

Now put glass on freezer for hours. After kulfi get freezes remove from glass. Completed.

Awesome Rasmalai Recipe

Rasmalai is a very rich and classic Sweet. Cottage Cheese Dumplings are dunked in a creamy and sweet milk sauce which is flavored with cardamom, saffron and jewelled with nuts. Every bite remains juicy and spongy and is a definite treat to the taste buds
Ingredients :
Cottage Cheese (Paneer) - 400 grams ( store bought paneer)
Milk - 1 liter
Sugar - 2 and 1/2 cup
Semolina - 1 tsp
Water - 1 liter
Cardamom - 1/2 tsp
Saffron strands - 2 pinches
Almonds - 8 to 10
Preparation Method :-
Process 1:

In a Bowl, Add Cottage Cheese (paneer) knead for 3-4 minutes
Add Sugar, Semolina, Cardamom Powder and knead it for 5-7 minutes until smooth and creamy in texture.
Then Take out Small Portions and make Smooth Balls approximately a lemon size. Then flatten them into thick discs and set aside.


Process 2:
Now Pour 1 liter Water into a Cooker and add 1 Cup Sugar
Bring it to boil until sugar is dissolved
Then gently slide the flattened Cottage Cheese (Paneer) into the syrup and cover the Cooker with a lid, cook until 1 whistle
Then take out from sugar syrup, Place it in the Strainer and with another spoon squeeze the excess sugar. Be gentle else it will crumble .
Cool down for few minutes.

Process 3:
Place 1 liter of Milk in a Saucepan and Add Sugar into it
Bring to a boil, then simmer on a low flame
Now add cardamom and saffron strands into it
Stir occasionally and wait until it reduces to half of its original volume.
Remove from the Flame and Keep aside to Cool Down.

Process 4:

Now Drop slowly into the cooled Sweet Milk Sauce
*Don’t Drop when sweet milk sauce is hot, it will crumble
Garnish with Almonds
For Better Taste Refrigerate for atleast an hour. Serve chilled!

Dahi Ke Kebab ( Stuffed Yogurt Kebabs )

Get the taste of dahi(Yogurt) in a different avatar from soft & creamy to crispy kebabs, that to made in minutes.

Step 1: Ingredients

 

1. Hung Curd - 250g
2. Roasted Gram flour - 2 tbsp
3. Red Chilli Powder - 1 tsp
4. Cardamom powder - 1 tsp
5. Cinnamon Powder - 1/4 tsp
6. Clove powder - 1/4 tsp
7. Salt - According to taste
8. Refined oil - 5 tsp
For filling
1.Cashew nut - 2 tsp
2. Walnut - 4 tsp
3. Raisins - 1 tsp
4. Green Chilli - 4
5. Ginger- 1 pc
6. Coriander leaves

Step 2: Preparation 

1. In a bowl ,add hung curd , gram flour, red chilli powder, cardamom powder, cinnamon powder and clove powder and salt and mix well .
Prepare a dough.
2.In a separate bowl , add chopped cashew nuts, walnuts , raisins, ginger, green chilli ,coriander and 1 tbsp of hung curd & mix well. Keep aside.

Step 3: Making kababs

1.Divide dough into small portions and fill each portion with the prepared mixture.
2.. Cover each piece with refined flour.
3. Heat a non-stick pan, and heat oil in it. Now shallow fry all prepared portions , till golden brown.
Now it is ready to eat !!!
Serve it with your favourite dip sauce.

RECIPE | MUSHROOM CREAM PASTA

My friend taught me this recipe and it's one of my favourite mushroom pastas ever! It's filled with that creamy mushroom taste like a warm mushroom soup with a hint of Parmigiana cheese and onions. Easy and quick to make. This is also a great recipe for vegetarians.

Step 1: INGREDIENTS


SERVES 4 | PREP TIME 20 MINS | COOK TIME 25 MINS
  • 2 pints of organic Cremini Mushrooms sliced
  • 500 grams of Rotini Pasta
  • 3/4 cup of 10% Half and Half Cream
  • 3/4 cup of White Wine (I use Pinot Grigio)
  • 1 Shallot Sliced 1 Small Onion Sliced
  • 8 Garlic Cloves finely chopped
  • 1/2 cup of Parmigiano Cheese Grated
  • 2 tablespoons of Extra Virgin Olive Oil
  • 2 Tablespoons of Butter
  • 1 small bunch of Italian Parsley chopped
  • 2 teaspoons of Salt
  • 1 teaspoon of Pepper
  • 1/4 cup of reserved Pasta Water 

Step 2: INSTRUCTIONS

  1. Prepare ingredients according to the list above
  2. In a large sauce pan, set heat to low-medium and add your butter and olive oil to melt
  3. Once melted, raise heat to medium and add in your shallots, onions, and garlic all at once. Cook until translucent (approximately 5 minutes)
  4. Add in your mushrooms and cook until softened (approximately 5 minutes)
  5. Season with some of your salt and pepper. The salt helps the mushrooms release the juices
  6. Meanwhile, begin boiling your pasta and only cook for 6 minutes before reaching Al Dente texture. Strain pasta and reserve some of that pasta water
  7. Pour in white wine and cook for another 5 minutes while stirring
  8. Lower the heat, add in your cream and let it simmer for 3 minutes
  9. Pour in your reserved pasta water and stir for a minute to thicken sauce
  10. Add in your grated parmigiano & parsley combining it well with sauce
  11. Turn off the heat and pour in your cooked pasta. Stir and coat pasta in the sauce
  12. Season with the remaining salt and pepper
  13. Garnish with some grated parmigiano and parsley

Tomato, Basil, and Mozzarella Chilled Pasta Recipe

It's a hot summer day. You're walking in the baking streets with your friend, looking for a place to eat. "I want pasta," your friend says. Pasta? It's 100 degrees! "No way," you protest. But your friend is insistent.
Now, this is where chilled pasta comes in!
Chilled pasta is perfect for summer. It is cold, refreshing, and filling. Chilled pasta is similar to pasta salad, but it can be made using tomato sauce or vinegar/oil based dressing. The tomato sauce version is essentially spaghetti - but chilled!
In this Instructable I will share both the tomato sauce and oil-based version of chilled pasta.

Step 1: Make the sauce! 

 

The sauce can either be tomato sauce or oil-based dressing. Both taste best when you have fresh, sweet, and delicious tomatoes at hand. The oil-based dressing is better for those of you who want a more light, salad-type meal, while the tomato sauce is better if you want a more classic spaghetti-like pasta.
Oil-based Dressing (Makes 2):
Ingredients:
  • 4 medium tomatoes, diced
  • 125g mozzarella cheese, diced (make sure to buy the one that comes in liquid)
  • 3/4 cup torn fresh basil leaves (make sure you save a few for decoration!)
  • 2 1/2 tbsp olive oil
  • 1 tbsp mozzarella liquid
  • salt and pepper, to taste 
  • 1/2 tsp pesto sauce (optional, this is just for extra flavor. If you don't want to add pesto, try adding something with garlic like garlic salt).
Directions:
  1. Combine all of the ingredients in a medium sized bowl.
  2. Once mixed, refrigerate for 10-20 minutes.
Tomato Sauce (Makes 2):
Ingredients:
  • 2 tbsp olive oil
  • 8 medium tomatoes, diced (you can peel the skin if you want a smoother tomato sauce)
  • 1 tbsp garlic-infused olive oil (you can also add 1/4 of a garlic, minced)
  • 1 cup torn fresh basil leaves (leave some for decoration!)
  • 125g mozzarella cheese, diced (unfortunately, I did not have any at the time so in the pictures you will not see any mozzarella cheese!)
  • salt and pepper, to tast
Directions:
  1. Heat the olive oil in a frying pan over medium heat. Add tomatoes and garlic-infused olive oil. Cook, stirring often until the tomatoes become very soft.
  2. Add basil leaves, mozzarella cheese, and salt and pepper. Cook until the sauce comes to a boil. When the sauce is finished, most of the tomatoes will have broken apart and become very soft.
  3. Transfer the sauce to a medium bowl. Cover and refrigerate for about 30 minutes.

Step 2: Make your pasta

This recipe works well with thin pasta. I would recommend either spaghetti or capellini. I used capellini for this one!
Directions:
  1. In a large pot of boiling salted water, cook 200g pasta according to the packaging instructions.
  2. Drain and rinse the pasta with ice water until the ice melts (the ice melts surprisingly quickly!).
  3. Let the pasta drain for about a minute and transfer to a large bowl.

 

Step 3: Combine pasta and sauce

After the sauce has been chilled, remove from the refrigerator. Combine the sauce and pasta, and voila! You are ready to serve!
You can decorate the pasta with a few basil leaves if you want.

Chocolate Mug Cake - 2 minutes recipe

I made this yummy Chocolate Mug Cake to celebrate 2nd Blogiversary for my blog. It is very simple recipe yet tasty too. You will need only 2 minutes to make this delicious cake. I doubled the below mentioned recipe to make 3 small mug cakes. Read on for the detailed recipe. Thank you.
Ingredients you will need,
1/4 cup All purpose flour / Maida
5 tbsp Sugar
1 large Egg
3 tbsp Milk
3 tbsp Vegetable oil
2 tbsp Cocoa powder
1/4 tsp of Vanilla essence
A pinch of Salt
Butter for greasing
Make : 1 big mug size

Step 1: Method

Take all the ingredients (expect butter) in a bowl, mix it all without any lumps.
Grease mug with butter.
Pour the batter into greased mug.
Leave 1/4th of space on top of mug for cake raising.Microwave it for 2 minutes.
That's all mug cake is ready.
Note : Microwave timing will be slightly differ from different microwave. If its not cooked in the centre, keep 20 to 30 more seconds.

Step 2: Serve !

 I love to have this cake with a scoop of vanilla ice cream. Add your favorite topping and relish it :)

Make a Perfect Pizza - With 2 Yummy Toppings!

Hi Guys!
I'm going to show you 'How to make a Perfect Pizza'... =)
With two different yummy toppings: 'Chicken Tikka' & 'Mustard Chicken with Pineapple'...
I'll show you everything... =)
From making the dough, to making the pizza sauce, to preparing the toppings!

This Recipe will make two 10" Round Pizzas.

So now lets begin...

Step 1: Preparing the Dough.

 Ingredients Needed:
Warm water             1/2 Cup
White Flour               4 Cups
Yeast                         2 Tsp
Sugar                        1/2 Tsp
Salt                            1 Tsp
Oil                              2 Tbsp

 Method:

1. For the Yeast Mixture:

    In a small bowl take 1/2 cup of Warm Water.
    Add Sugar & Yeast. Mix & Cover.
    Leave for 5 minutes until frothy.

2. For the Dough: 
    Now in a large bowl, add sifted flour, salt, oil & the yeast mixture.
    Mix & add more warm water as needed.
    Knead well for 5 - 7 minutes.

 Rub some oil on the dough.
    Cover the bowl with a large plastic wrap.
    Leave the dough to rise in a warm place for half an hour or until dough is double in size. 

 

Step 2: Preparing the Pizza Sauce.

 This Sauce Recipe is for two 10" round Pizzas.

Ingredients Needed:

Fresh Tomatoes (Blended) 1/2 Kg
Onion (Chopped)                   1 small
Garlic (Chopped)                   1 Tbsp
White Vinegar                         3 Tbsp
Oregano                                  1/2 Tsp
Crushed Red Pepper           1 Tsp
Salt                                           1/2 Tsp
Olive Oil                                   3 Tbsp

Method:

 
a. Add Olive Oil in a frying pan on medium flame.
    Add the chopped onion & garlic.
    Sauté for about 1 minute.

b. Now add the blended/pureed tomatoes, as well as all the spices & vinegar.
    Mix well.

c. Now Cover & let simmer until the water dries up & you get a thick paste.

d. Cook for another 5 minutes stirring occasionally.
    Then turn off the flame. Set Aside.

Step 3: Preparing the Toppings.

 Vegetables:

Dice Cut all the vegetables.

Onion                     2 medium sized
Capsicum             1 medium sized
Cabbage               1 Cup diced
Fresh Tomatoes  3 Medium sized

Cheese:

 Cheddar Cheese     125 gm
Mozzarella Cheese  125 gm

Grate both cheddar & mozzarella cheese & combine together.

Chicken Tikka: (Step 4)

Mustard Chicken with Pineapple: (Step 5)

(Pineapple Chunks 1/2 cup) 

 

Step 4: Chicken Tikka Topping.

 Ingredients Needed:
Chicken (Boneless)   100 gm
Garlic                             1/2 Tsp
Coriander powder       1/2 Tsp
Red pepper powder    1/2 Tsp
Black Pepper powder 1/4 Tsp
Lemon Juice                2 Tsp
Yogurt                            2 Tbsp
Vinegar                          1 Tbsp
Salt to taste
Oil                                   1 Tbsp

Method:

 a. Cut the chicken in small pieces.
     Add all the ingredients except oil, & marinate for about 15 minutes.

b. In a frying pan heat 1 or 2 tbsp oil.
    Add the chicken & cook for 15 minutes or until chicken is cooked.
    Set aside. 

 

Step 5: Mustard Chicken with Pineapple Topping.

 Ingredients Needed:
Chicken Boneless        100 gm
Garlic                               1/2 Tsp
Mustard Paste               1 Tbsp
Crushed Red pepper   1/2 Tsp
Oregano                          1/2 Tsp
Salt                                   1/2 Tsp
Oil                                     1 Tbsp

Method:

a. Cut the chicken in small pieces.

b. Add all the ingredients.

c. Mix & leave to marinate for about 10-15 minutes

d. Heat 1- 2 Tbsp oil in a frying pan.
    Add the chicken & cook until chicken is tender.
    Set aside. 

 

Step 6: Preparing the Pizza Base.

 After the Dough has risen, punch down the dough.
And knead a bit before rolling it out. (Sorry guys... Couldn't take pictures of this step!)

Now take half of the dough for your first Pizza...
Dust your work surface first with flour, so that the dough doesn't gets sticky.
Now roll the dough out with your rolling pin.
Make the dough 2 cm thick.

 First grease your pizza pan with oil.
Now for placing the base in your pan... (Below is a video tutorial too!)
Dust the top of the base with flour.
Fold the round in half, now fold again.
Lift it up with your hands... and place it in one corner or side of your pizza pan!
Open up the folds... and stretch the dough to the sides of the pan.

Step 7: Assembling the Pizza.

 Lets start assembling the Pizza:

a. Place your Pizza base in the Pizza Pan (10" round).

b. Brush the sides of  the base with oil, that gives the crust a nice golden color when baked.

c. Spread half of the Pizza Sauce on the base.

d. Now spread half the cheese you grated, on the base. Spreading it evenly.

e.Chicken Tikka: Arrange the vegetables (Onion, tomatoes, capsicum, cabbage) & the chicken. Then sprinkle some oregano on top.
    Mustard Chicken:  Arrange the prepared Mustard Chicken, Cabbage, Onion, Tomatoes & Pineapple chunks on top. 

 Step 8: Baking the Pizza.

 Now place the Pan in your Oven...
Bake in a preheated oven for about 20 - 25 minutes! 

 

Step 9: Ready to Eat! =).

 Take out your Pizza from the Oven...

Marble Cake

Usually we buy marble cake but its very easy and simple and more delicious if made at home ....lovely for tea times....enjoy the recipe and give a try...


Ingredients
Butter- 100 grams
oil- 3 tbsp
Sugar-11/4 th cup
Cocoa powder- 1/3rd cup
Vanilla Essence- 10 grams or 1/2 tsp
Eggs- 3 Medium size
Baking soda-1 1/2 tsp
All purpose flour- 200 grams or 2 cups
Milk- 1/2 cup or 50 ml
Cooking Chocolate- 1/2 cup
Butter (extra for Chocolate topping)- 20 grams
Powdered sugar- 2 tbsp.


Method: 

Shift the all purpose flour ,baking soda and vanilla essence powder ,mix and keep aside.
Now in a bowl add the butter and 1/4th cup of sugar and beat it with the hand blender , add now eggs and vanilla essence powder. and beat them all and add the sugar in and keep on beating the mixture. At the end add the oil. and beat all.
Now add the dry ingredients to the wet. Mix well.
Now in a bowl add some amount of milk and add the cocoa powder and mix well.
Now separate the mixture into two parts one part add in the cocoa mixture and now in a rectangular baking dish layer one side(taking one spoon) with cocoa mixture and one spoon of vanilla mixture (alternatively to form a design) repeat the process and bake at 180 degree Celsius for around 50 minutes.. Check by poking a knife or tooth pick , if it comes out clean thats the sign that its baked....
Now for the topping .... Boil 1/2 cup of milk and add chocolate and sugar in it ... let it melt...
pour it on the cake and ready to eat.... ( if you have any queries you can watch the video posted above)
